Smoothies are a nutritious and quick meal. This one is packed full of good fats from the avocado and coconut as well as lots of fibre. I add some of the coconut flesh into the smoothie and use the rest to make coconut rice. What I like most about this smoothie is that it is based on raw, nutrient rich whole foods.

Break open the top of the coconut.
Add the juice from 1 fresh drinking coconut, 3 tbsp of the coconut flesh (or as much as you like) as well as the avocado, banana flesh, spinach, date and celery to the blender. Blend on high speed for 1 minute or until blended. Serve in glass and enjoy.
