How would you know which muesli bars to buy when there are so many sold at the supermarket? You could spend hours checking each ingredient list to see which ones are rubbish and which ones are OK or you can make your own which are much better than OK.
When you make your own you know they are full of quality ingredients and really there's no comparing them in taste. These are much better. They're a great mid afternoon treat which you and the kids will love.
Place a large dry frying pan, over a medium heat.
Roast the oats and coconut flakes separately until fragrant.
Transfer to a large bowl.
Roughly chop the pistachios and add to bowl with pepitas, rolled and puffed rice. Add cranberries and blueberries.
Gently heat rice syrup together in a pan with coconut oil.
Pour into dry mix and stir to combine well.
Line a baking tray with greaseproof paper and press mixture into tray
Place in oven preheated to 160 C for 20 minutes
Remove from oven set aside to cool and store in fridge
Makes 14 servings (serve = 1 piece)
