Some people have to satisfy a sweet tooth but it's worthwhile training the tastebuds to accept a dessert that is not as sweet as what they are used to. Over time the desire to finish a meal with something sweet will hopefully diminish.
In a large saucepan bring apple juice to the boil, add agar agar and turn heat down to simmer, stirring until dissolved.
Boil 1 cup of water and add cocoa and stir until dissolved. Using a wire whisk gradually beat in vanilla and cocoa to hot apple juice.
Pour mixture into a shallow baking pan and cool. When liquid has ceased steaming place in refrigerator for 30 minutes.
Remove mocha mixture from fridge and slice into small pieces.
Place half of mocha into a blender with a little tahini and puree. Repeat with the remaining mocha. When mixture is smooth place into bowls and serve. Garnish with almonds. You can also have it in its set state without placing in blender.
Note: Soy milk or silken tofu can be added for a creamier texture.
