This Japanese inspired high protein soup is great for a light meal.
Rinse mushrooms and soak in warm water for 10 minutes. Drain; remove stalks from shitake and slice.
Fill a pan with 1-½ litres of water and add shitake. Bring to boil.
Gently drop salmon into the water. All the water to reach a low simmer point then reduce the heat. Cook for 6 minutes. Meanwhile spoon about 1/3 cup shitake broth from the pan and mix it into the miso paste until smooth and runny.
Add noodles and bok choy to cook for 2 minutes.
Pour miso into soup and stir. Do not allow soup to boil.
Cut wakame into 2 cm pieces and add to soup.
Serve with chopped shallots.
