This is a quick easy mid week meal - smoked trout like smoked salmon has a high salt content so don't add extra salt in the cooking. Buy whole smoked trout from the fish shop that's been naturally smoked.
Boil water in a saucepan for the noodles.
Meanwhile, heat the olive oil in a small frying pan and when hot add the garlic slivers and chilli to the oil and cook until the garlic is golden and crunchy. Set aside for later.
Cut the smoked trout into small bitesize pieces.
Steam vegetables until tender.
Add noodles to the boiling water and cook until tender, approximately 6 minutes. Drain immediately and rinse until plenty of cold water to avoid them sticking together.
Return to the saucepan, mix the garlic and chilli mixture through it, toss through the vegetables, and finally stir through the smoked trout.
Serve with fresh lime juice squeezed over the top.
