This cake is best warm out of the oven but it's also nice cold.
( note from Food Coach : Remember this is an occasional treat and while it is made using natural ingredients it is still high in energy. You can increase the fibre content by using half brown flour and half white, and reduce kJ by reducing the amount of sugar. People with high cholesterol may also want to consider and plant sterol spread in place of butter.)
Preheat the oven to 180 degrees celsius,
Core & grate the apples into a large bowl, add the brown & raw sugars, mixing well to combine. Melt the butter on the stovetop, then leave to cool slightly before adding it to the apple mixture, along with the beaten egg.
Sift the flours, spices, baking powder & bicarb soda into a separate bowl and then gently fold into the apple mixture. Add the nuts and pour into a prepared bundt in and bake for 40-50 minutes. Remove from the oven and allow to cool in the tin for a couple of minutes before turning out and cooling on a cake rack.
