If fresh bread, butter and milk is scarce then you can try your hand at this damper using olive oil and a combination of wholemeal and white flour. Who knows, if the kids like it you may just convert them to brown bread in the future. Spelt flour is even better if you can find it.
Preheat the oven to 220C
Sift the flours, baking powder and salt into a bowl and then add the olive oil and combine with a wooden spoon until it resembles bread crumbs.
Using your spoon make a well in the middle of the bowl and add the milk and water.
Use a knife and work the dough until it leaves the sides of the bowl.
gently knead the dough on a lightly floured board and work into a round about 15cm in diameter.
Place the dough onto a baking tray lined with baking paper and cut a cross across the centre of the damper (about 1 cm deep).
Place in the oven for 10 minutes then reduce the heat to 180C and bake for a further 20 minutes.
