A classic creamy chicken pasta is made with butter, cream, whole milk and parmesan cheese and is loaded in unhealthy fat. With 30g saturated fat per serve - it is one and a half times the entire daily amount of saturated fat recommended to maintain a healthy heart - it is way too much to eat in one meal. This creamy chicken and broccoli pasta uses light cream cheese, broccoli and wholemeal pasta - it's a substantial meal with only 6g of saturated fat, 6 times more fibre and significantly less kilojoules.
Lightly steam the broccoli florets for approx 4 mins.
Add the pasta to a pan of water and cook it according to the instructions on the pack. Whilst this is cooking heat 2 tbs of olive oil in a large pan and add 500g chicken breast, cut into strips with 2 tbs lemon rind and 200g sliced mushrooms, and let that cook for about 8 minutes turning the chicken over to make sure it's completely cooked.
When this is cooked, add 500g broccoli florets and finally 60g of the reduced fat cream cheese. Stir until it has completely melted through the dish. Place the cooked & drained pasta into a serving dish and top with the chicken/broccoli/cheese mixture. Season with black pepper.
