It's easy and inexpensive to make your own delicious healthy fish & chips. This recipe is low in all the bad fat you associate with fish and chips and instead boosted in good fat from the avocado, antioxidants from the sage, and fibre from the potatoes (unpeeled of course). Not forgetting the excellent protein from the flathead and egg white, this is guilt free fish and chips, and that's my kind of food.
Preheat oven to 210 degrees celsius.
Wash and dry the potatoes and cut into chip shapes.
Beat the egg whites to combine and add the chopped sage. Coat the potato in the egg white mix and lay the chips onto a lightly oiled tray to bake for 40 minutes. Brush the flathead with a little olive oil and place under the hot grill to cook for 5 minutes each side. Sprinkle with a little lemon juice and cracked black pepper.
For the salsa combine together the avocado, zucchini, sage & dill. Add the juice of 1/2 a lemon & season with cracked pepper. Serve with the fish and chips and accompanying salad.
