Take advantage of cherries this summer by teaming them up with some interesting but equally healthy ingredients. Your eyes, body and taste buds will be all be rewarded by this dish. It looks amazing tastes delicious and is packed full of nutrients.
Preheat oven tp 200 degrees Celsius.
Make 4 individual large foil parcels and divide the almonds and cherries into each one. Lay the salmon fillets on top and drizzle a teaspoon of olive oil and tablespoon of wine on each. Season with salt and pepper. Wrap the foil up and lay on a tray in the oven. Bake for 20 minutes. Serve with a wedge of lime on the top.
Serve with a green side salad, and, if you're not trying to lose weight, some quality sourdough to mop up all the juice.
