On its own, black bean and barberry salad is a delicious accompaniment to cold cuts of turkey, ham or poached salmon. Served with grainy sourdough bread and soft goats cheese, it becomes a complete meal and can be served for lunch or dinner. It contains an astounding number of antioxidant rich foods which when combined are visually spectacular.
Combine the black beans, barberries, chilli and parsley together in a bowl.
Mix together in a small jar the olive oil, vinegar, mustard and seasoning. Pour over the salad and stir through.
Serve the salad over a bed of washed greens with goats cheese crumbled over the top.
