Pork is a great source of protein, and what I particularly like about it is that the fat is easy to see and therefore very easy to remove -
this simple step saves a total of about 4000Kj.
Mix all marinade ingredients together, and pour over the pork to marinade for 2 hours or longer.
Cut the sweet potato into wedges and brush lightly with olive oil.
Place in a preheated oven set to 220C for 30 minutes turning them occasionally.
Heat the BBQ or grill pan and cook the pork for about 3 - 4 minutes on each side or until 'medium done' and the juices are just pink to clear.
Rest for a few minutes in a warm place on the BBQ. Avoid overcooking.
Serve with a crisp salad of greens, sliced fennel, asparagus and dressing.
