There's so much meat on each of these turkey drumsticks you can easily feed a family of four for a fraction of the cost of most other low fat protein foods. The meat is moist and succulent and in the dish is incredibly easy to prepare.
Preheat oven to 180 degreess Celsius.
Remove the skin from the drumsticks and brush with olive oil.
Place tomatoes, asparagus, red capsicum, green capsicum, onion, stock and thyme sprigs into a large roasting pan.
Season with salt and freshly ground black pepper. Toss until well combined.
Place turkey drumsticks on top of vegetables.
Place in the oven to roast for 1 hour 15 minutes basting every 20 minutes or so to keep the turkey moist.
Serve with barley .
