While we don't recommend making this fresh lemonade too often, it's still infinitely better that soft drinks, with much less sugar and no additives. It's a great drink to make over the school holidays.

Cut lemons in half and squeeze out juice. Put juice & pulp into non-metallic bowl.
Add lemon juice, sugar and water to pan and gently bring to the boil. Simmer until the sugar dissolves.
Remove from the heat, transfer to a glass jug with the mint.
set aside to cool.
Remove the mint and pour into bottles bottle with lids.
To make the lemonade pour 60 ml of cordial into a glass and top up with sparkling water.
Makes 35 servings (serve = 60 ml of cordial )
