These are fun, yum and relatively low in energy.
I tested them for the first time with a bunch of friends over for dinner and the general consensus was a big thumbs up. I also tested my blood sugar levels after eating them and they stayed well within a health range. ( note - everyone's blood glucose response is different )
The recipe makes 12 ( 2 per serve) I served them with the choice of coconut yoghurt or coconut ice-cream.
Preheat the over to 185C.
Lightly brush a mini muffin tray with olive oil
Combine the mango, salt, kaffir lime, lime juice and sesame seeds in a bowl.
Cut the filo pastry into squares.
Brush a single square of filo with olive oil. Repeat and lay the second square over the first to make a star shape. Continue with the process until you have a layer of 5 sheet. Brush a little maple syrup over the top
Lift the pastry up in your hands and spoon a little of the mango mixture into the middle. Arrange it in the muffin tray lifting the pastry over the top to cover the mango.
Continue until the mango is finished.
Place in the oven to bake for 10 minutes.
Remove and set aside on a rack to cool
( Be careful as tempting as it is to eat one straight from the oven, they are super-hot!)
