One of my all-time favourite meals when the temperature is dropping just enough to benefit from the comfort of an immune-boosting hot broth.
Place the mushrooms and water in a large saucepan and bring the water to the boil.
Reduce the heat to a simmer, add the salmon and poach for 6 minutes.
Spoon the miso into a small bowl. Pour ½ cup of water from the pan and slowly stir in a little bit at a time until the miso paste becomes a smooth sauce.
In the final 3 minutes of poaching the salmon, add the broccolini.
Stir through the miso sauce just before serving with the bok choy and serve as soon as the bok choy starts to wilt.
Serve bowls and sprinkle with shallots and chilli (if desired)
