This easy recipe is in the Autumn section of The Greengrocer's Diet and if you haven't got a copy yet you really should because it's really excellent!
Preheat the oven to 180C
Combine the breadcrumbs,horseradish, lime juice, and parsley together in a small bowl. Season with cracked black pepper and mix well.
Brush salmon with olive oil.
Heat a grill pan to hot and sear the salmon, skin side down for 2 - 3 minutes.
Transfer the salmon to a baking tray.
Spoon the breadcrumb mixture evenly over the uncooked side of the fish and place in the oven for 12 minutes.
Steam the beans during the final 4 minutes of the salmon cooking.
Serve the beans alongside the salmon.
