Cream
Cream is a dairy product made by skimming the top layer of fat from raw milk before homogenisation. There are several grades of cream, ranging from low-fat to full-fat.
Sour cream is made by adding a bacterial culture to fresh cream and allowing it to ferment, producing lactic acid which sours and thickens the cream.
