This is a small kernel from the seed of a variety of cherry, grown mostly in the Middle East. It has an unusual, sweetly-bitter flavour, and is traditionally added to Greek Easter breads.

Buy whole from Greek or Middle Eastern stores, or from a specialty spice retailer. Grind it just before using for optimum flavour and freshness.
To Store:
Store in an airtight container and use within 2 years. When mahlab is too old, it develops a rather rancid overtone.

Grind mahlab and use to flavour cakes, pastries and biscuits in traditional Middle Eastern and Greek cooking.
