Adzuki Beans
A small, reddish-brown bean with a sweet flavour. The adzuki bean is often used in Japan to make desserts.

Available from most health food stores or greengrocers and specialised stores. It can also be found in most supermarkets.
To Store:
Store in an airtight container in the pantry.
Tips & Tricks:
To aid digestion, bring a pot of water to the boil with the beans and add a strip of kombu. Discard the kombu when boiled.
Cooking Tips:
Adzuki beans must be soaked overnight and cooked for up to 1 hour depending on the age of the bean.
