Sorrel
Sorrel leaves resemble spinach in their shape, and grow from 5 - 30cm in length. The leaves are often used in French cooking, and have a refreshing, slightly bitter quality.

Choose sorrel with firm, bright-green, crisp, and arrow-shaped leaves. Avoid sorrel with woody-looking stems or leaves that are yellow or wilted.
To Store:
Keep fresh sorrel in the fridge in a plastic bag for three days. Dried sorrel can be kept in an airtight container in a dark place for six months.
