Edam
A hard cheese originating from Holland, covered with characteristic red wax. Whole Edams are made into large balls. Being made from semi-skimmed milk it has a lower fat content than most other cheeses and therefore is a preferable option for those wishing to lose weight.

Buy from a good deli or cheese shop.
To Store:
A whole Edam surrounded in wax will keep for a year. Sliced, with the outer edge covered in wax and the exposed sides wrapped in a damp cloth or piece of greaseproof paper, it will keep for about three weeks in the fridge.
Tips & Tricks:
Edam cheese can be frozen in chunks (approx 200g) wrapped in an airtight package. Thaw in the refrigerator, and use it up soon after it's thawed.
