Orange Roughy
Orange Roughy is also known by other names, including deep sea perch, red roughy or sea perch. The average fillet size is 225g and 18cm long. Orange roughy is only sold as fillets with the skin removed. Both the skin and a layer of oil underneath the skin is inedible. Orange Roughy fillets are boneless and have a moist, medium to firm texture and mild, delicate flavour.

Note about amines: Fresh seafood has low amine levels, but when older than two days the amine content rises to moderate, and any fish that has been frozen has high levels.

To Buy:
Look for skinless fillets that are pearly-white in colour, have no brown markings, and have a pleasant, fresh smell.
To Store:
Wrap fillets in plastic wrap or place in a covered container. Fillets will keep in the refrigerator for 2-3 days or you can freeze for up to 3 months.
Tips & Tricks:
Always make sure that the fillets are skinless.
Cooking Tips:
If fillets are large and thick, cut into serving size portions and score to allow even heat penetration; the tail part of the fillet can also be tucked under. Best baked, grilled, barbecued, steamed or poached.  It is delicious served with fresh herbs.
