Mullet
Mullet is a small to moderate-sized fish living along the coast and in freshwater of most temperate and tropical regions. They were thought to be a favourite of the Romans. Some mullet have an earthy taste due to swimming in the bottom of the river in the mud. Mullet is a moist, oily fish with a strong flavour.
Note about amines: Fresh seafood has low amine levels, but when older than two days the amine content rises to moderate, and any fish that has been frozen has high levels.

To Buy:
Sold whole and in fillets. Look for firm flesh, bright and bulging eyes and pleasant smell.
To Store:
Scale, clean and gut whole mullet. As with fillets, store in airtight container or cover with plastic wrap. Can be stored in the refrigerator for 2-3 days or frozen for up to 3 months.
Tips & Tricks:
To butterfly a mullet, clean, gut and scale. Remove the head, slit the belly from head to tail and remove all black stomach lining. Open the fish and flatten on a board, flesh side down. Press firmly along the backbone, turn fish over and pull out backbone and any other bones.
Cooking Tips:
Grill, bake or BBQ.
