A large, pale nut with a dark skin grown in Brazil and Bolivia only. They grow on trees up to 60m high in pods the size of coconuts. Each pod contains up to 30 kernels. Once dried, Brazil nuts are ready to eat.
Brazil nuts are a good source of the powerful antioxidant selenium. It is thought that one Brazil nut a day may help protect men from getting prostate cancer.
Nuts go rancid easily and should not be stored for too long. During summer store nuts in the fridge or otherwise a cool dry cupboard away from sunlight. Store nuts for no longer than 6 months.

To Buy:
Buy small quantities of nuts when you need them. Best to buy nuts raw and roast yourself - they are more delicious that way. Buy your nuts from a health food store or a supplier who you can be assured has a high turnover of produce.

Tips & Tricks:
Dry roast your own nuts in a small frying pan. Add 1/2 tablespoon of oil, a pinch of sea salt and some chilli flakes and stir continuously under a moderate flame until they change colour and become fragrant.
One serve is equivalent to about 5 brazil nuts.
If you ate only one Brazil nut a day, you would never be deficient in selenium, says Donald J. Lisk, at Cornell University.
Cooking Tips:
Brazil nuts can be made into salsa or roasted but are generally not used in any other cooking.
Chop and add to homemade muesli along with oats, sunflower seeds, coconut flakes, raisins and chopped dates.
