Flounder
Flounders are a flatfish. They generally have a delicate to medium flavour. Generally 20 - 25 cm long.

Note about amines: Fresh seafood has low amine levels, but when older than two days the amine content rises to moderate, and any fish that has been frozen has high levels.

To Buy:
Buy from the fish market. Look for fish with good colour and lustre, firm flesh, and pleasant, fresh sea smell.
To Store:
Wrap fillets or cutlets in plastic wrap or place in a covered container. Keep refrigerated for up to 3 days or you can freeze for up to 6 months.

Flounders are often served whole and can either be boned-out, or served with the bones left in to provide an appearance. Recommended grilled with a light brush of olive oil and lemon.
