Zatar
Zatar dates back to ancient Egypt. It's a middle eastern spice mix made from dried herbs, including thyme and oregano, sesame seeds, sumac and salt. It's widely available these days from greengrocers, good delis and on-line spice shops, or you can make your own. Zatar is commonly served with pita bread and olive oil but is delicious sprinkled over meat and chicken.
