Oyster Sauce
Originally made using only oysters, water and salt, soy sauce is now added to produce a thick, dark brown sauce. Popular in Asian cooking, especially stir-fries, oyster sauce adds richess to dishes without dominating their natural flavours.
Category: Condiment
In Season: all year
To Buy:
Check labels for artificial colours and flavours, eg MSG, often referred to as flavour enhancer 621. Caramel colour and cornstarch are often added to thicken and stabilise the sauce, so it is better bought from a health food store to avoid these unnatural ingredients.
To Store:
Once opened, store in the fridge.
