Lavender Flowers
Lavender flowers have a slightly pungent floral flavour, rather like rosemary, with an edge of lingering bitterness. When used in sweet cooking such as shortbread and ice cream, the bitterness is not noticeable.

Buy lavender flowers from a reputable supplier to be sure that they have not been subjected to agricultural sprays. Food-grade lavender is different from lavender used for aroma, which may have other oils added.
To Store:
Store in airtight containers away from heat and light. Dried lavender flowers should last for 2 years from date of packing.
Tips & Tricks:
Lavender is an ingredient in the classic European blend, Herbes de Provence. They are also frequently added to Moroccan dishes and spice blends such as Ras el Hanout. Add lavender to sweet biscuits, meringues and ice cream for colour, flavour and texture.
