Bonito Flakes
Bonito flakes are thin, pink shavings of dried mackerel. Used to make dashi - (Japanese stock) which forms the basis of most Japanese soups and sauces.

To Buy:
Buy from an Asian grocer. Best bought in individual sachets that are pre-weighed. It is more economical to buy it in larger packs but as it's light and you need very little you run the risk of mismeasuring the quantity required. Use too much and the flavour will overpower everything.
To Store:
Store in the pantry - because it's dry and packaged it has a long shelf-life.
Tips & Tricks:
Invest in a very fine sieve to strain the bonito when making dashi - it will save SO much time.
