Redfish
Redfish is a popular low - medium priced fish that is known for its sweet tasting, pale-pink flesh with fine to medium flakes and several fine bones.
Redfish also have coarse scales, the reason why they are mainly sold skinned and filleted.

Also known as golden snapper, red snapper or nannygai.

Note about amines: Fresh seafood has low amine levels, but when older than two days the amine content rises to moderate, and any fish that has been frozen has high levels.

To Buy:
Redfish are usually sold as fillets. Look for lustrous, firm pink flesh with a pleasant sea smell - avoid any with brown, dry patches.
To Store:
Refrigerate for 2-3 days wrapped in plastic wrap or stored in a covered container.  Freeze for up to 4 months.

Redfish are great to use in fish cakes as the small bones will break down in the food processor - Kids will love them.
