Nutrient-Rich: Root vegetables are packed with essential vitamins and minerals. For instance, carrots are rich in beta-carotene, which converts to vitamin A in the body, promoting good vision and a strong immune system. Potatoes provide a good dose of vitamin C, B6, and potassium, essential for energy production and heart health. Celeriac is an excellent source of dietary fibre, vitamin K, and antioxidants.

Delightful Winter Recipes with Root Vegetables

1. Roasted Root Vegetable Medley

Ingredients:

2 parsnips, peeled and cut into chunks
2 carrots, peeled and cut into chunks
1 celeriac, peeled and cubed
2 potatoes, peeled and cubed
1 swede, peeled and cubed
2 turnips, peeled and cubed
3 tbsp olive oil
Salt and pepper to taste
Fresh rosemary and thyme

Instructions:
Preheat your oven to 200C (400F).
In a large bowl, toss the vegetables with olive oil, salt, and pepper.
Spread the vegetables on a baking sheet in a single layer.
Sprinkle with fresh rosemary and thyme.
Roast for 35-40 minutes, turning occasionally, until the vegetables are tender and golden brown.
Serve as a side dish or toss with cooked grains for a hearty winter salad.

2. Creamy Celeriac and Potato Soup

Ingredients:

1 large celeriac, peeled and cubed
3 potatoes, peeled and cubed
1 large onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 cup milk or cream
Salt and pepper to taste
Fresh parsley for garnish

Instructions:
In a large pot, saute the onion and garlic until translucent.
Add the celeriac and potatoes, cooking for a few minutes.
Pour in the vegetable broth and bring to a boil.
Reduce heat and simmer for 20-25 minutes until the vegetables are soft.
Blend the soup until smooth using an immersion blender.
Stir in the milk or cream, and season with salt and pepper.
Garnish with fresh parsley before serving.

3. Parsnip and Carrot Mash

Ingredients:

3 large parsnips, peeled and chopped
3 large carrots, peeled and chopped
2 tbsp butter
2 tbsp cream
Salt and pepper to taste

Instructions:
Boil the parsnips and carrots in a large pot of salted water until tender, about 15-20 minutes.
Drain and return to the pot.
Add the butter and cream, mashing until smooth.
Season with salt and pepper to taste.
Serve as a comforting side dish to roast meats or vegetarian mains.

4. Swede and Turnip Gratin

Ingredients:

1 large swede, peeled and thinly sliced
2 turnips, peeled and thinly sliced
1 cup grated Gruyere cheese
1 cup cream
2 cloves garlic, minced
Salt and pepper to taste
Fresh thyme leaves

Instructions:
Preheat your oven to 180°C (350°F).
In a baking dish, layer the swede and turnip slices.
In a small bowl, mix the cream, garlic, salt, and pepper.
Pour the cream mixture over the vegetables.
Sprinkle with grated Gruyere cheese and fresh thyme.
Bake for 40-45 minutes until the top is golden and bubbly.
Allow to cool slightly before serving.
